Rockmelon yoghurt

Makes: 2 portions

INGREDIENTS
2 cups diced rockmelon (cantaloupe)
5-6 Tbsp yoghurt
2 Tbsp chopped pecans (other nuts can be used)
1 Tbsp hulled sesame seeds

 


1. Cut rockmelon (cantaloupe) into bite sized pieces into a bowl.

2. Divide rockmelon into two equal portions in two bowls.

3. Add 2-3 Tbsp yoghurt to each bowl.

4. Sprinkle with chopped pecans and sesame seeds.

Rockmelon can be frozen (then thawed slightly) for a great summer breakfast or snack.

Special Oats

Makes: 2 portions

INGREDIENTS
1 cup water
1/2 cup skim milk (can substitute soy, rice or other milk)
1/2 cup oats
6 dried prunes
1-2 dried figs
1-2 Tbsp hulled sesames seeds
6-10 pecans, walnuts or almonds finely chopped (or grated)

 


1. Add water and milk to pan and boil.

2. Add oats and allow to simmer gently until oats have cooked - stir constantly so oats don't stick.

3. Once cooked, removed from pan and add equal portions to 2 bowls.

4. Cut figs and prunes into small pieces and add to oats.

5. Sprinkle with nuts and seeds and stir. Serve immediately.

This is a great recipe as it contains no added sugar, is low glycemic, a fantastic breakfast recipe and will give an energy boost to last.
