Ingredients
- 1 can tinned tuna (in water)
- 1/2 cucumber
- 1/4 – 1/2 avocado
- 1/2 red capsicum
- 1/2 green capsicum
- 1/2 cup lightly cooked green beans cut into 5cm pieces
- Lettuce leaves,
- Baby spinach leaves
- 2 tomatoes
- Balsamic vinegar
- Olive Oil
- Salt, to taste
- Parsley for decoration
Method
- Drain tuna from can and add to large bowl
- Slice or chop capsicum and add to bowl
- Shred lettuce leaves and baby spinach and add to bowl
- Cut avocado & tomatoes into small chunks and add to bowl
- Slice cucumber and add to bowl
- Add balsamic vinegar, olive oil and salt to taste
- Mix all the ingredients together, so they are coated with the dressing
- Serve immediately
